Koshima owes much of its distinctive branding, appearance, and allure to the visionary creativity of Junichi Machida, the 24-year-old only child of Nonki’s founders. Joining the company just two years ago, he has ascended to the role of Chief Operating Officer, overseeing the entire operation, from menu creation and testing to the aesthetic design of the restaurant interiors. You’ll be amazed by his profound knowledge of each of the three hundred-plus food and beverage offerings at Koshima.
Located at level 2 of NUSTAR, Koshima’s interior design draws inspiration from traditional Japanese culture, showcasing an aesthetic characterized by simplicity and functionality brought to life through a palette of soothing, neutral colors. The place has a calming atmosphere that gives you a pleasant dining experience. It’s also an ideal place to have meetings with business associates.
Worth mentioning is the culinary mastery and craftsmanship of Chef Edgar Bulanon, who has been with the company since its inception 19 years ago. He received most of his training from Nonki and has been doing observation tours in Japan to augment his training.
